1 pound fresh wheat noodles
3-4 tablespoons premium chili oil
2 tablespoons Chinese sesame paste or tahini
2 tablespoons soy sauce
1 tablespoon Chinese black vinegar
1 teaspoon ground Sichuan peppercorns
2 cloves garlic, minced
1 tablespoon sugar
4 scallions, finely chopped
1/2 pound ground pork (optional)
Preparation method: Cook the noodles according to package directions until just tender. While noodles cook, whisk together chili oil, sesame paste, soy sauce, vinegar, Sichuan peppercorns, garlic, and sugar in a large bowl. If using pork, brown it in a hot pan with a touch of oil until crispy. Drain noodles and immediately toss with the chili oil mixture, ensuring every strand is coated. Top with ground pork and fresh scallions.
